HAND-BAKED IN THE QUANTOCK HILLS
WHOLE SPONGES & CAKES
All our sponges & classic cakes are made in small batches with extreme care & attention. Our sponges are lovely & light & fluffy as with our combination of free range eggs, Doves Farm Organic flour & lots of air in the mixing, they rise beautifully.
We use fresh ingredients in our buttercreams & we are careful with our decoration. Quite often our jams are homemade or at the very least, bought from a local supplier (whortleberry jam).
Freshly grated carrots, courgettes, lemons & oranges are used in all our baking as well as fresh pears & apples (which are usually local). We never use artificial flavourings.
We use both dark & white Belguim chocolate in our baking as well as ‘Cocoa Barry’ extra brut cocoa powder which produces a rich, fine product. Our very gooey chocolate biscuit crunch recipe, decorated with apricots, is a firm favourite in many tearooms.
All our shortbreads are made with butter & Doves Farm Organic flour & Doves Farm rice flour.
We have sourced our lavender & rose petals from Somerset which add a lovely decoration to the lavender shortbread.
GLUTEN FREE CAKE & SLICES
We are always increasing our range of gluten free cakes & slices, which are extremely moist & from our own favourite recipes. Our GF chocolate, orange & almond cake is extremely well liked with our customers as it has a truffle like centre & we include lashings of fresh orange zest.
We have chosen vegan recipes which have a good refrigerator life & our bars taste amazing! We use organic rapeseed oil, coconut cream & lots of dried succulent fruit to give taste & texture. The Chocolate & Cranberry Bars are a mouth-watering addition this year.
